Roasted Chicken Drumsticks with Spiced Potatoes & Chilis

Ingredients:

8 drumsticks

600g potatoes, cubed

1 onion, sliced thin

1–2 chilies (red or green), sliced

3 tbsp olive oil

2 tsp oregano

1 tsp thyme

1 tsp smoked paprika

3 garlic cloves, minced

Salt & black pepper

⅔ cup chicken stock or water

1 tbsp lemon juice (optional)

Parsley for garnish

Instructions:

Set oven to 200°C / 400°F. Grease a baking dish.

Season drumsticks: Mix oil with herbs, garlic, salt, and paprika. Coat chicken thoroughly.

Toss vegetables: Mix remaining marinade with potatoes, onions, and chilies.

Arrange in dish: Spread veg on bottom. Place chicken over top. Add broth around the sides.

Bake 50 mins, turning chicken once, until everything is golden and fully cooked.

Garnish & serve: Finish with parsley and lemon juice if using.
