Cinnamon Sugar Quick Bread

Ingredients:

2 cups all-purpose flour

1 cup granulated sugar

1 tbsp baking powder

1/2 tsp salt

1 cup milk

1/3 cup vegetable oil or melted butter

1 large egg

1 tsp vanilla extract

Cinnamon Sugar Mixture:

1/3 cup sugar

2 tsp ground cinnamon

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a bowl, mix flour, sugar, baking powder, and salt.
  3. In another bowl, whisk milk, oil (or butter), egg, and vanilla until smooth.
  4. Combine wet and dry ingredients; stir just until moistened.
  5. In a small bowl, mix cinnamon and sugar.
  6. Pour half the batter into the loaf pan, sprinkle half the cinnamon sugar mixture, then add remaining batter. Top with remaining cinnamon sugar.
  7. Bake for 45–55 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
