Ingredients:
For the Filling:
- 1 lb lean ground beef
 - 1 cup diced yellow onion
 - 1 tsp garlic powder
 - 1 tsp Italian seasoning
 - Salt and pepper, to taste
 - 1 cup mini pepperoni (or chopped regular pepperoni)
 - 1 ½ cups shredded mozzarella cheese
 - ½ cup grated Parmesan cheese
 
For the Sauce:
- 1 (15 oz) can pizza sauce
 - ½ cup enchilada sauce (mild or medium)
 
For the Enchiladas:
- 8 medium flour tortillas
 - 1 ½ cups shredded mozzarella (for topping)
 - ¼ cup sliced black olives (optional)
 - 2 tbsp chopped parsley or basil (optional)
 
Instructions:
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
 - Cook the beef mixture:
In a large skillet over medium heat, cook the ground beef and onion until browned. Drain excess grease.
Add garlic powder, Italian seasoning, salt, pepper, and pepperoni. Stir and cook for 2 more minutes. - Mix in cheese:
Remove from heat and stir in mozzarella and Parmesan cheese until melty and combined. - Prepare the sauce:
In a bowl, whisk together the pizza sauce and enchilada sauce. - Assemble enchiladas:
Spoon a little sauce into the bottom of the baking dish.
Place a scoop of the beef mixture into each tortilla, roll up, and place seam-side down in the dish. - Top it off:
Pour remaining sauce over the enchiladas. Sprinkle with mozzarella and optional black olives. - Bake:
Cover with foil and bake for 20 minutes. Uncover and bake an additional 10 minutes, or until cheese is bubbly and golden. - Garnish and serve:
Sprinkle with parsley or basil before serving. 
Tips:
- Add chopped mushrooms, bell peppers, or jalapeños for a veggie twist.
 - Swap ground beef with Italian sausage for extra flavor.
 - Serve with a side salad or garlic bread for a complete meal!
