Ingredients (Makes 6–12 cups):

  • 6–12 slices deli ham (thin but sturdy; black forest or honey ham works great)
  • 6 large eggs
  • ½ cup shredded cheese (cheddar, mozzarella, Swiss, or a mix)
  • Salt & pepper, to taste
  • Optional add-ins:
    • Diced bell peppersspinachonions, or green onions
    • A pinch of paprikachili flakes, or everything bagel seasoning

Instructions:

1. Preheat Oven:

  • Set to 375°F (190°C).
  • Grease a muffin tin or spray with nonstick spray.

2. Assemble Cups:

  • Line each muffin cup with a slice of ham, pressing it down to form a little bowl.
  • Sprinkle in a bit of shredded cheese.
  • Crack 1 egg into each ham cup (or whisk the eggs first if you prefer a scramble-style texture).
  • Season with salt, pepper, and optional toppings.

3. Bake:

  • Bake for 12–15 minutes for runny yolks, or 15–18 minutes for fully cooked eggs.
